Preheat and prepare dough
Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating. Lightly dust a work surface with the 2 tablespoons flour. Stretch or roll the pizza dough into a 12-inch round (or to fit your pan), leaving a slightly thicker rim for the crust. Transfer to a pizza peel or baking sheet lightly brushed with 1 tablespoon olive oil.

Season the sauce
In a small bowl mix the 1 cup tomato pizza sauce with 2 teaspoons minced garlic (from the divided amount), 1 teaspoon dried oregano, 1 teaspoon salt, and 1/2 teaspoon black pepper. Taste and adjust seasoning. Spread an even layer of the seasoned tomato sauce over the stretched dough, leaving the outer 1/2 inch un-sauced for the crust.

Prepare toppings
Ensure artichoke hearts are well drained and roughly quartered. Halve pitted olives, thinly slice the onion, and thinly slice the fresh tomatoes. Crumble the feta and shred the mozzarella if not pre-shredded. Chop the additional fresh garlic finely.
Assemble pizza
Sprinkle the shredded mozzarella evenly over the sauced dough (optional step for better melt). Distribute the quartered artichoke hearts evenly across the pizza. Scatter the halved olives and thinly sliced onions across the surface. Arrange the fresh tomato slices on top so they roast rather than sog. Sprinkle the crumbled feta evenly over the pizza. Dot the chopped fresh garlic over the toppings. Lightly sprinkle 1/2 teaspoon dried oregano and 1/4 teaspoon red pepper flakes (if using) across the top. Finish with a teaspoon of extra-virgin olive oil drizzled over the surface.
Bake
Slide the pizza onto the preheated stone or place the baking sheet in the oven. Bake at 475°F (245°C) for 10–14 minutes, until the crust is golden and cheese (if using) is bubbling and starting to brown. If your oven runs hot, watch closely after 8 minutes.
Rest and serve
Remove the pizza from the oven and let rest on a cutting board for 3–5 minutes to allow toppings to set. Slice into 8 pieces and serve warm. Optionally finish with an extra drizzle of olive oil or a small sprinkle of fresh oregano or basil.
