Prepare flax egg (if using)
If making a flax egg, combine 1 tablespoon ground flaxseed with 3 tablespoons water in a small bowl, stir, and let sit 5–10 minutes until gelled. Otherwise proceed with 1 regular egg.
In a large bowl, lightly mash the rinsed black beans with a fork or potato masher leaving some whole beans for texture (about 30–40% mashed).
Season the mixture with ground cumin, smoked paprika, soy sauce (or tamari), salt, and black pepper. Stir well so spices are evenly distributed.
Add the egg (or prepared flax egg) and mix until the mixture holds together. If mixture feels too wet, add up to 1 tablespoon additional oats; if too dry, add 1–2 teaspoons water.
Taste a small pinch and adjust seasoning if needed (more salt, pepper, or soy sauce).
Divide the mixture into 4 equal portions (about 3/4 cup each). Form each portion into a patty about 3/4-inch thick, pressing firmly so they hold together. Place patties on a plate or baking sheet and refrigerate 15 minutes to firm up (optional but helps keep shape).
Cook patties 4–5 minutes per side until a browned crust forms and internal temperature feels hot and firm. If using cheese, place a slice on each patty in the last minute of cooking and cover the pan briefly to melt.
Transfer cooked patties to a plate lined with paper towels and let rest 2 minutes.

While patties cook, prepare toppings: slice tomato, red onion, and avocado. Wash and dry lettuce leaves.
Toast buns in a toaster or in a dry skillet cut-side down until lightly golden (about 1–2 minutes).
Mix mayonnaise, ketchup, and mustard in a small bowl to make a quick burger sauce. Taste and adjust proportions to preference.
Serve immediately with your choice of sides (fries, salad, or roasted vegetables).
