Choose protein
Decide whether you'll serve smoked bacon, country ham, or sausage. This recipe lists bacon by default (3 slices). If using ham, warm 2–3 thin slices in the pan 1–2 minutes per side. If using sausage links, cook 3 links until internal temperature reaches 160°F (about 10–12 minutes over medium heat), turning occasionally.
Cook bacon
Heat a large nonstick or cast-iron skillet over medium. Add bacon slices in a single layer. Cook 3–5 minutes per side depending on thickness until crisp-tender and browned. Transfer bacon to a plate lined with paper towel to drain; keep skillet with rendered fat for eggs (or wipe lightly if you prefer less fat and add 1 tsp oil).
Pan-fry eggs (two farm-fresh eggs)
Reduce heat to medium-low. If there is excessive bacon fat, pour off leaving about 1 tsp in the pan; otherwise add 1 tsp oil. Crack eggs into a small bowl one at a time, then gently slide into the skillet spaced apart. For sunny-side-up: cook undisturbed 2–3 minutes until whites set but yolks still runny; cover with a lid for 20–30 seconds if whites need finishing. For over-easy: cook 2 minutes, gently flip with a spatula, cook 15–30 seconds more. Season with 1/8–1/4 tsp salt and a pinch of black pepper while cooking.
Farmer's Toast
Toast the bread: while the eggs are cooking, heat a separate skillet (or use a toaster). Spread 1 tbs butter on one side of each bread slice. Place buttered side down in the skillet over medium heat and toast 2–3 minutes until golden and crisp; flip and toast the other side 1–2 minutes until warmed through. Alternatively, toast to preferred doneness in a toaster and butter immediately.
Accompaniments
Cheese and pickles: arrange 2 oz sliced or chunked mature cheddar on the plate beside the toast. Place 2 pickle spears or cornichons and the sliced tomato (or small dressed salad) on the plate.
Finish and season: spread remaining 1/2 tsp butter on the hot toast if desired. Taste the eggs and add more salt and freshly cracked black pepper to taste. Serve immediately while eggs are hot and toast is crisp.
