Toasted Bagel & Spread
Prepare and toast bagels
Slice each bagel in half horizontally. If desired, lightly butter the cut sides with the unsalted butter. Toast bagel halves in a toaster or under a broiler until golden-brown and crisp at the edges, about 2–4 minutes depending on your appliance. Remove and set on a plate, cut side up.
Allow toasted bagel halves to cool for 30–60 seconds, then spread about 3 tablespoons of cream cheese on each whole bagel (1.5 tbs per half) so each serving has a generous layer. Reserve remaining cream cheese if any.

Prepare vegetables and garnishes
Thinly slice the red onion into rings. If you prefer milder onion, rinse the rings under cold water for 30 seconds and pat dry. Slice Backyard Farms tomatoes into 1/4-inch rounds or dice into 1/2-inch pieces depending on your presentation preference. Finely chop the fresh dill. Drain capers well on paper towel. Cut lemon into 4 wedges.
Assemble smoked salmon plate
Divide smoked salmon slices between the two bagel halves (about 4 oz salmon per full bagel). Arrange the salmon in gentle folds on top of the cream cheese to create height and texture.
Top each salmon-topped bagel with a few red onion rings (about 1/8 of the sliced onion per half), 1 teaspoon of capers, and a sprinkle of chopped dill (about 1/2 tsp per bagel). Season lightly with sea salt (a pinch) and freshly ground black pepper (about 1/4 tsp per bagel). Squeeze a lemon wedge over each assembled bagel to taste.
Place the tomato slices or diced tomatoes on the side of the plate or atop the bagel (if using slices, tuck them beneath the salmon or alongside to prevent sogginess). If using arugula or baby greens, toss lightly with 1 tsp olive oil and a pinch of salt and serve alongside the bagel as a small salad accompaniment.
Plating & Service
Arrange two assembled bagel halves on a serving plate. Add the dressed greens (if using) and the tomatoes. Garnish the plate with remaining lemon wedges. Serve immediately while the bagels remain slightly warm and the salmon is chilled.
Optional: provide extra cream cheese, capers, and red onion on the side so diners can customize each bite.
