Citrus Juices

Method

Prep

1

Prepare fruit

Wash the oranges and grapefruits under cold water. Using a sharp knife, cut off the stem ends, remove the peel and as much of the white pith as possible (pith adds bitterness). Section the fruit into segments and remove any seeds. Weigh or measure to yield roughly 6 cups of citrus segments (the ingredient amounts above assume ~6 cups total).

2

Chill equipment

If you’re serving cold, place glasses and a juice container in the refrigerator or freezer for 10–15 minutes. Keep a bowl on hand to catch juice/pulp if using a manual press.

Cold Press Extraction

3

Using a cold press (masticating) juicer

Feed the orange and grapefruit segments slowly into the juicer chute. Collect the juice in a clean container. If your juicer separates pulp and juice, you may combine some or all of the pulp back into the juice for body, depending on preference.

4

Using a hydraulic or manual citrus press

Place sections into the press basket and press to extract as much juice as possible. Repeat until all fruit is pressed. Strain the juice through a fine-mesh strainer or cheesecloth into a container to remove large bits of membrane if desired.

5

Using a blender (cold-press style, alternative)

Place citrus segments in a high-speed blender with 1 cup cold filtered water. Pulse briefly just to release juice (do not fully purée). Immediately pour the blended mixture through a fine-mesh strainer or nut milk bag into a bowl, pressing with a spatula or squeezing the bag to extract as much liquid as possible. This method mimics cold-press texture but introduces more oxygen—use immediately.

Finish & Balance

6

Taste the freshly extracted juice. If it’s too tart or bitter, stir in honey or agave a teaspoon at a time until balanced. Add the fresh lime juice if you want extra brightness and a pinch of sea salt to round flavors. Mix thoroughly.

7

If you prefer a lighter juice, stir in up to 1/2 cup additional cold water to reach preferred intensity. For a chilled serving, add ice cubes to the pitcher or directly to glasses.

8

Strain once more through a fine sieve if you added sweetener or salt and want an ultra-clear juice. Serve immediately over ice or keep refrigerated in an airtight container for up to 48 hours. Shake gently before serving if separated.
