Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, diced carrots, and diced celery. Sauté until the vegetables are soft and the onion is translucent, about 5-7 minutes.

Add Tomatoes and Broth

Stir in the diced tomatoes, fish stock (or clam juice), bay leaf, dried thyme, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes.

Add Seafood

Add the shrimp, scallops, and white fish fillets to the pot. Simmer for an additional 5-7 minutes, or until the seafood is cooked through and opaque.

Finish and Serve

Remove the bay leaf, stir in the fresh parsley and lemon juice. Taste and adjust seasoning if needed. Serve hot in bowls.
