    Prepare vegetables

    Peel and cut the onion into 1/4-inch slices. Core and seed the bell pepper, then cut into 1/4-inch strips. Finely mince the garlic cloves.

    Cook sausages

    Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausages and brown on all sides, about 8–10 minutes, turning occasionally. If sausages are thick, cover for 5 minutes to cook through, then uncover and brown again. Remove sausages to a plate and keep warm.

    Sauté vegetables

    In the same skillet, add the remaining 1 tablespoon olive oil. Add the sliced onion and bell pepper. Season with 1/2 teaspoon of the salt and 1/2 teaspoon pepper. Sauté over medium heat until softened and lightly caramelized, about 7–9 minutes. Add the minced garlic in the last 1–2 minutes and cook until fragrant.

    Combine with tomatoes (optional)

    If using crushed tomatoes for a saucier sandwich, push the vegetables to the side of the skillet, slice each sausage into 2–3 pieces and return to the pan. Pour in 1 cup crushed tomatoes and sprinkle the dried oregano and remaining 1/2 teaspoon salt. Simmer gently 4–6 minutes until sauce thickens slightly and flavors meld. Taste and adjust seasoning.

    Alternatively finish without sauce

    If not using tomatoes, slice each browned sausage lengthwise or into chunks and return to the skillet with the vegetables for 1–2 minutes to reheat and mingle flavors. Remove from heat.

Assemble & Serve

    Preheat the broiler (or oven to 425°F / 220°C).

    Slice the hoagie rolls lengthwise, leaving a hinge if desired. Spread a light layer of butter on the cut sides of each roll.

    Place the rolls, buttered side up, on a baking sheet and broil or bake until lightly toasted and golden, 1–3 minutes under the broiler or 5–7 minutes in the oven. Watch closely to avoid burning.

    Fill each toasted roll with an equal portion of the sausage and vegetable mixture (with sauce if used). Lay a slice of provolone or mozzarella over the hot filling so it melts. If you prefer extra melt, return assembled sandwiches to the oven or under the broiler for 30–60 seconds until cheese is bubbly.

    If desired, add fresh basil leaves and a drizzle of hot sauce or smear of grainy mustard to each sandwich.
