Fondue (Kilt Lifter beer cheese)

Prepare cheeses
Grate the cheddar and Gruyère and toss them with the 2 tablespoons of flour in a bowl until evenly coated. This helps prevent the cheese from clumping when melting.

Whisk in the softened cream cheese until smooth. Reduce heat to low. Add the grated cheeses a handful at a time, whisking or stirring constantly until each addition melts and the mixture is smooth before adding more. Maintain a gentle low simmer — aggressive boiling can separate the cheese.

Stir in the Dijon mustard, Worcestershire sauce, lemon juice, freshly ground black pepper, and grated nutmeg. Taste and adjust seasoning. If desired, stir in 1/2 teaspoon kirsch for a classic fondue aroma. Keep the fondue at a very low simmer so it stays smooth and dippable. If the fondue becomes too thick, whisk in a tablespoon of warm beer or milk at a time to reach desired consistency.

Prepare the Schreiner's sausage: If the links are pre-cooked/smoked (as typical), slice into 1/2-inch rounds. To warm and lightly brown them, heat a skillet over medium heat with 1 teaspoon neutral oil and sauté the slices 2–3 minutes per side until warmed through and lightly caramelized. Transfer to a platter.

Prepare the Asian pear: Core and cut into 1/2-inch wedges or slices. Keep them unbrushed for crunch; if you expect extended sitting time, toss lightly with a few drops of lemon juice to slow browning.

Prepare rye pretzels and bread: If using large soft pretzel pieces or fresh rye cubes, warm them in a 350°F (175°C) oven for 5–7 minutes to refresh and crisp the exterior. If using hard pretzels, serve at room temperature.

Arrange the warmed sausage slices, pear wedges, rye pretzel pieces, bread cubes, and cornichons on a serving board or platter around the fondue pot for easy dipping.
Assembly & service

Transfer the finished fondue to a warmed fondue pot set over a low flame or burner. Stir once to ensure smoothness. Keep the heat low so the fondue remains fluid but does not boil.

Garnish the top of the fondue with the sliced chives and a light dusting of smoked paprika. Place dippers around the pot. To eat, spear a sausage slice, pear wedge, or pretzel with a fondue fork or skewer, coat in the beer cheese, and enjoy.

If the fondue separates or becomes grainy, whisk in 1 teaspoon cornstarch slurry (1 tsp cornstarch + 1 tbsp cold water) off heat, then return to low heat and stir gently until smoothed. Alternatively add small amounts of warm beer or milk to adjust consistency.
