Prepare glass
Chill a double old-fashioned glass or tiki mug by filling it with ice and setting it aside while you mix the cocktail.

Measure ingredients
Measure 2 oz aged rum, 0.75 oz fresh lime juice, 0.5 oz fresh orange juice, 0.5 oz orgeat, 0.5 oz demerara syrup, 0.25 oz allspice dram, and 2 dashes Angostura bitters into a cocktail shaker.

Add ice and shake
Add about 1 cup of ice to the shaker. Secure the lid and shake vigorously for 12–15 seconds until the shaker is cold to the touch and well diluted. This chills and slightly dilutes the thick syrups and spirits so the drink balances.

Double-strain and pour
Double-strain the shaken cocktail over the crushed ice using a Hawthorne and fine mesh strainer (this removes small ice shards and any pulp from the citrus). Pour until the glass is nearly full, leaving a small well on top for the float.

Float overproof rum
Pour 0.25 oz overproof rum gently over the back of a bar spoon onto the surface of the drink to create a float. The stronger spirit will sit on top, adding aroma and a dramatic sip.

Garnish and finish
Garnish with a sprig of mint (slap between your palms to release oils before placing), a lime wheel on the rim, and grate a small amount of fresh nutmeg over the top. Optionally add a short straw placed to the side of the mint so the float's aroma reaches the nose when sipping.

Serve
Serve immediately while very cold. Stir gently once or twice with the straw if the guest prefers a blended drink; otherwise let them enjoy the layered aromatics from the float.
