Short Rib Preparation

    Season and Sear

    Season the beef short ribs with salt and black pepper on all sides. In a large pot or Dutch oven, heat olive oil over medium-high heat. Sear the short ribs until browned on all sides, about 8-10 minutes. Remove the ribs and set aside.

    Sauté Vegetables

    In the same pot, add diced onion, carrot, and celery. Sauté for about 5 minutes until vegetables are softened. Add minced garlic and cook for an additional 1 minute until fragrant.

    Braise the Ribs

    Return the short ribs to the pot. Add beef broth, Dijon mustard, fresh thyme, and bay leaves. Bring to a boil, then reduce heat to low and cover. Simmer for about 2-3 hours until the meat is tender and falling off the bone.

    Shred the Meat

    Once cooked, remove the short ribs from the pot and let them cool slightly. Shred the meat with two forks, discarding any bones and excess fat. Return the shredded meat to the pot and mix with the sauce.

Sandwich Assembly

    Prepare the Bread

    Butter one side of each slice of sourdough bread. On the unbuttered side, layer the shredded short rib mixture and top with shredded Gruyere cheese.

    Grill the Sandwich

    Heat a skillet over medium heat. Place the sandwich buttered side down in the skillet. Grill until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. Repeat for all sandwiches.

    Prepare the Salad

    In a bowl, combine frisee lettuce, olive oil, lemon juice, salt, and pepper. Toss to combine.

    Serve

    Slice the grilled sandwiches in half and serve alongside the frisee salad.
