Strawberry Shake

Enjoy a creamy and refreshing regular-sized strawberry shake made with ripe strawberries and smooth vanilla ice cream.

Select ripe Zweigelt grapes in late autumn when they have reached their optimal sweetness. Aim for around 1.5 kg of grapes.

Harvesting Grapes

Gently crush the harvested grapes to release the juice while keeping the skins intact. This step is crucial for extracting color and flavor.

Crushing Grapes

Mix 200 g of sugar with the crushed grape mixture. This will help increase the sweetness and alcohol content during fermentation.

Adding Sugar

Add 10 g of yeast to the grape mixture. Stir gently and cover the mixture, allowing it to ferment for 2-3 weeks at a temperature of around 18-20°C (64-68°F).

Fermentation

Check the fermentation daily, ensuring that the temperature remains stable and the mixture is bubbling, indicating active fermentation.

Monitoring Fermentation

Once fermentation is complete, press the mixture to separate the liquid wine from the grape skins. This will yield the wine base.

Pressing

Dilute the wine base with 500 ml of water to balance the sweetness and acidity.

Adding Water

Introduce 50 g of oak chips into the wine. This will impart additional complexity and flavor. Allow the wine to age for at least 6 months in a cool, dark place.

Aging with Oak Chips

Once aging is complete, filter the wine to remove any solids. Bottle the wine in sterilized bottles and seal them with corks.

Bottling

Let the wine rest in the bottle for a few months before enjoying. Serve chilled and savor the bright cherry, ripe strawberry, and red currant notes.
