Method
Queso base
Make a roux
In a medium saucepan over medium heat, melt the unsalted butter. Whisk in the all-purpose flour and cook for 1–2 minutes, stirring constantly, until the mixture is bubbling but not browned.
Add milk and seasonings
Slowly whisk in the whole milk until smooth. Add garlic powder, onion powder, smoked paprika, salt, and black pepper. Continue to whisk and bring to a gentle simmer for 2–3 minutes until the mixture thickens slightly.
Melt the cheeses
Reduce heat to low. Add shredded Monterey Jack and shredded sharp cheddar in small handfuls, stirring to melt completely between additions, until the sauce is smooth and homogenous. Keep warm on the lowest heat, stirring occasionally.
Spinach & artichoke mix
Prepare spinach and artichokes
While the queso finishes, ensure the thawed spinach is well drained and lightly squeezed to remove excess moisture. Roughly chop the drained artichoke hearts into bite-sized pieces.
Combine with cream cheese
In a medium bowl, beat the softened cream cheese until smooth. Stir in the drained spinach, chopped artichokes, grated Parmesan, lemon juice, and red pepper flakes until evenly distributed.
Incorporate into queso
Fold the spinach-artichoke-cream cheese mixture into the warm queso sauce. Stir over low heat for 2–3 minutes until everything is heated through and the texture is creamy. Taste and adjust salt or pepper if needed.
Finish & serve
Assemble for baking (optional)
Preheat oven to 375°F (190°C) if you want a browned top. Transfer the dip to a shallow ovenproof dish. Sprinkle the extra 1/2 cup shredded Monterey Jack evenly over the top.
Bake & garnish: Place the dish on the middle rack and bake 10–12 minutes, until cheese on top is melted and beginning to brown. Remove from oven and sprinkle with freshly chopped parsley.
Alternative stovetop finish: If not baking, simply transfer the hot dip to a serving bowl, top with the extra shredded Monterey Jack and allow it to melt from the residual heat; garnish with parsley.
Serve: Arrange wheat chips around the dip or on a platter for scooping. Serve immediately while warm.
