Prepare shrimp

Rinse the shrimp under cold water and pat dry thoroughly with paper towels. If shrimp are larger than 16/20, leave tails on for presentation; remove if desired.

Make chipotle marinade

In a small blender or bowl, combine chipotle peppers in adobo (start with 2 tbs, reserve extra if you want more heat), lime juice, olive oil, minced garlic, honey, smoked paprika, cumin, kosher salt, and black pepper. Puree or whisk until smooth and emulsified.

Marinate shrimp

Place the dried shrimp in a shallow dish or zip-top bag. Pour the chipotle marinade over the shrimp and toss to coat evenly. Refrigerate for 15–30 minutes (no more than 30 minutes to avoid texture changes). If short on time, marinate at room temperature for 10 minutes.

Grill & Finish

Preheat and oil grill

Preheat a grill or grill pan to medium-high (about 425–450°F / 220–230°C). Brush the grates or pan with neutral oil to prevent sticking.

Skewer (optional) and remove excess marinade

If using skewers, thread 5 shrimp per skewer, leaving a little space between each so heat circulates. Let excess marinade drip off to avoid flare-ups—wipe lightly with paper towel if needed.

Grill shrimp

Place shrimp on the hot grill or grill pan. Cook 2–3 minutes per side until opaque and slightly charred at the edges; total cook time about 4–6 minutes depending on shrimp size. Do not overcook—shrimp should be firm with a slight spring.

Finish and garnish

Transfer grilled shrimp to a plate and squeeze a little lime over them. Sprinkle chopped cilantro on top. Let rest 1–2 minutes before serving.

Avocado & Queso

Prepare avocado

Halve the avocado, remove the pit, and slice or dice the flesh while still in the skin. Sprinkle with 1/4 tsp salt and 1/8 tsp black pepper. Gently toss or fan the slices for presentation.

Assemble with queso

Arrange the avocado next to or under the grilled shrimp and sprinkle 2 tbs crumbled queso fresco or cotija over the avocado and a little over the shrimp if desired. Add 2 tbs pickled red onion if using for brightness.

Serve

Plate 10 chipotle grilled shrimp with the seasoned avocado and queso. Serve with lime wedges on the side for additional acidity.
