    Prepare mango

    Select 2 cups of very ripe mango flesh (about 1 large or 2 medium mangoes). Peel the mangoes, cut the flesh away from the pit, and dice into rough chunks so they blend easily.

    Blend base

    Place the diced mango, 1 cup cold water, 1 tablespoon fresh lime juice, 2 tablespoons granulated sugar, and a pinch of fine salt into a blender. Secure lid and blend on high until completely smooth, about 45–60 seconds. Stop and scrape down the sides if needed.

    Adjust texture & sweetness

    Taste the blended nectar. If it's too thick, add up to 1/2 cup more cold water and blend briefly. If you prefer sweeter nectar, add sugar 1 teaspoon at a time, blending after each addition until desired sweetness is reached. The lime and salt should brighten the flavor β€” adjust to taste.

    Strain (optional for silky texture)

    For an extra-smooth nectar, pour the blended mixture through a fine-mesh sieve into a pitcher, pressing with a spatula to extract as much liquid as possible and leaving fibrous bits behind. Discard solids.

    Chill & serve

    Add 1 cup of ice cubes to the pitcher or pour the nectar over ice-filled glasses. If you want a lighter, fizzy drink, top each glass with cold sparkling water or club soda (about 1/4–1/2 cup per serving). Stir gently to combine.

    Garnish

    Garnish each glass with a sprig of fresh mint leaves if desired. Serve immediately for best flavor and freshness.
