    Make the dough

    In a medium bowl, combine 2 cups precooked white cornmeal and 1 tsp salt. Gradually add 1.5 cups warm water, mixing with your hand or a spoon until a soft, smooth, non-sticky dough forms. Let rest 5 minutes; if dough is dry add up to 2 tbsp more water.

    Shape

    Divide dough into 6 equal portions (about 3.5–4 ounces / golf-ball size). Roll each portion into a ball, then flatten gently into rounds about 3.5–4 inches wide and 1/2 inch thick. Smooth the edges to prevent cracking.

    Cook arepas

    Heat a large nonstick or cast-iron skillet over medium heat and add 2 tbsp vegetable oil, spreading to coat. Add arepas (work in batches if needed) and cook 6–8 minutes per side, until a deep golden crust forms and they sound hollow when tapped. Reduce heat slightly if they brown too fast; they should cook through. Transfer to a baking sheet and keep warm, or finish in a 350°F (175°C) oven for 8–10 minutes if needed to ensure they are cooked through.

    Sauté aromatics

    While arepas rest or cook, heat 1 tbsp olive oil in a medium skillet over medium heat. Add 1/2 cup finely diced yellow onion and sauté until translucent, about 4 minutes. Add 2 minced garlic cloves and cook 30–45 seconds until fragrant.

    Season and mash

    Add 1.5 cups cooked black beans to the skillet along with 1/2 tsp ground cumin, 1/2 tsp smoked paprika, 1/2 tsp salt, and 1/4 tsp black pepper. Stir to combine and cook 2–3 minutes. Add 2 tbsp water and use a fork or potato masher to lightly mash the beans, leaving some whole beans for texture. Adjust consistency with small amounts of water if too thick.

    Finish beans

    Stir in 1 tsp lime juice, taste and adjust seasoning (add more salt or lime if desired). Keep warm until assembly.

    Prepare arepas for filling

    If desired, slice each arepa horizontally about two-thirds of the way through to create a pocket. Alternatively, split them open with a knife. Brush cut sides with 1 tbsp butter or oil and return to skillet cut-side down for 1–2 minutes to lightly toast and melt butter.

    Assemble Arepa Domino

    Fill each arepa pocket with a generous spoonful (~1/4 cup) of warm smashed black beans and top with about 2 tbsp crumbled white cheese. For a classic 'Domino' look (black and white), distribute beans and cheese so both are visible. Sprinkle with chopped cilantro and a few drops of hot sauce if using.
