Prepare the Chocolate Batter

Preheat your oven to 200°C (390°F). In a medium saucepan, melt the dark chocolate and unsalted butter over low heat, stirring until smooth. Remove from heat and let it cool slightly.

Mix the Sugar and Eggs

In a large mixing bowl, whisk together the granulated sugar, large eggs, and egg yolks until the mixture is pale and slightly thickened.

Combine Mixtures

Gradually add the melted chocolate mixture to the egg mixture, whisking continuously to combine. Then, stir in the vanilla extract.

Add Flour

Gently fold in the all-purpose flour until just combined. Be careful not to overmix.

Prepare Baking Molds

Grease four ramekins with butter and dust with cocoa powder to prevent sticking.

Fill Ramekins

Divide the chocolate batter evenly among the prepared ramekins, filling each about 3/4 full.

Bake the Budino

Place the ramekins on a baking tray and bake in the preheated oven for 10-12 minutes, until the edges are firm but the center is still soft.

Let Cool and Serve

Remove from the oven and let the budinos cool for a minute. Carefully invert each ramekin onto a plate. Serve immediately with a scoop of Tahitian vanilla gelato and drizzle with chocolate sauce.
