Form patties

Divide the 1 lb ground beef into four even portions (about 4 oz each). Gently form each portion into a patty roughly 3.5–4 inches in diameter and about 3/4 inch thick. Make a shallow dimple in the center of each patty with your thumb to prevent excessive puffing during cooking.

Season

Place patties on a plate and season both sides evenly with kosher salt (about 1 tsp total) and freshly ground black pepper (about 1/2 tsp total). If using, brush or sprinkle about 1 tsp Worcestershire sauce across the tops for extra savory flavor.

Cook patties

Heat a large skillet or griddle over medium-high heat and add 1 tablespoon neutral oil. When the oil is shimmering and the pan is hot, add patties without crowding (work in batches if needed). Cook for 3–4 minutes on the first side until a brown crust forms. Flip and cook 2–4 minutes more for medium doneness (internal temperature ~145–160°F / 63–71°C). Adjust time for desired doneness.

Add cheese

About 1 minute before the patties finish cooking, place the chosen cheese slice on each patty and cover the pan with a lid or tent with foil to melt the cheese (about 30–60 seconds). For two American slices, place on two patties; use cheddar, Swiss, or pepper jack on the others according to selection.

Buns & Cheese

While patties cook, split hamburger buns and spread a thin layer of softened butter on each cut side (about 1/2 tbs per bun). Place buns butter-side down in a separate skillet or on the same griddle set to medium heat. Toast for 1–2 minutes until golden and crisp. Remove and keep warm.

Prepare toppings while buns and patties cook: wash and dry lettuce leaves and arrange one leaf per burger. Slice the tomato into 1/4-inch rounds and use 1–2 slices per burger depending on size.

Assemble: Place a toasted bottom bun on a plate, top with a lettuce leaf, add the hot cheeseburger patty, place tomato slices on top of the patty, and finish with the toasted top bun.

Serve ketchup, mustard, mayonnaise, pickles, and sliced onions on the side or at a condiment bar so diners can add to taste. If you prefer, spread condiments on the buns before assembly.
