Prepare and flatten
Pat the chicken breasts dry with paper towels. If they are uneven in thickness, place each between two sheets of plastic wrap and gently pound with a meat mallet or heavy skillet until about 1/2 inch (1.2 cm) thick and even. This ensures quick, even cooking.
Season and marinate briefly
In a small bowl combine olive oil, garlic powder, smoked paprika, dried oregano, salt, black pepper and lemon juice. Brush or rub the mixture evenly over both sides of the flattened chicken breasts. Let rest at room temperature for 10–15 minutes (or refrigerate up to 2 hours if preparing ahead).
Cook the chicken
Heat a large skillet or grill pan over medium-high heat until hot. Add 1 tbs olive oil or a light coating of cooking spray. Place the breasts in the pan (do not overcrowd). Cook for 3–4 minutes without moving until a golden crust forms, then flip and cook another 3–4 minutes until the internal temperature reaches 165°F (74°C). If using cheese, lay a slice on each breast during the last minute of cooking and cover the pan briefly so the cheese melts.
Rest
Transfer the cooked chicken to a cutting board and let rest for 5 minutes to retain juices. Slice if desired for easier sandwich assembly.

Prep vegetables and sauce
While the chicken rests, slice the tomato into 1/4-inch rounds and thinly slice the red onion. Tear or wash lettuce leaves and pat dry. In a small bowl, mix mayonnaise and Dijon mustard; add hot sauce if using and stir to combine.
Assemble sandwiches
Spread a generous layer of the mayonnaise-Dijon mixture on both toasted bun halves. On the bottom bun place lettuce leaves, then the cooked chicken breast (or sliced chicken), then tomato slices, red onion and pickles or avocado if using. Top with the second cheddar slice if you didn't melt cheese on the chicken. Crown with the top bun.
Serve
Cut the sandwich in half if desired and serve immediately while the chicken is warm. Offer additional condiments on the side.
