Portioning and reheating pre-cooked meats

Select three meats from the Meat Selections. Use 0.5 lb (8 oz) of each meat per plate so total meat weight per plate is 1.5 lb (3/4 pound listed per the menu is likely per guest but here we follow the menu offering of 1/2 lb each). For brisket (sliced or chopped): warm gently in a steam table or covered pan at 140–160°F (60–71°C) for 10–15 minutes until heated through. If using sliced brisket, arrange slices; if chopped, transfer to a small hotel pan and coat lightly with 1 tbs BBQ sauce to retain moisture. For pulled pork: reheat in covered pan with 1–2 tbs pan liquid or BBQ sauce over low heat for 8–12 minutes, stirring occasionally. For sausage or jalapeño cheddar sausage: reheat whole links in oven at 350°F (175°C) for 8–12 minutes or grill briefly until internal temperature reaches 165°F (74°C); slice at a bias for plating. For halal hot links and pork ribs: reheat gently in covered foil at 300–325°F (150–160°C) for 15–20 minutes until hot throughout. For boudin: slice and pan-sear 2–3 minutes per side until heated; for bone-in chicken and chicken breast: reheat in oven at 325–350°F (160–175°C) covered for 12–18 minutes until 165°F (74°C) internal. For turkey: reheat sliced or shredded turkey in a covered pan with a tbsp stock or pan juices at low heat until 140–150°F (60–65°C).

Finishing and plating the meats

Once each selected meat is hot, portion each meat to 0.5 lb onto the plate: arrange three meats side-by-side or in a fan across the plate. For sliced proteins (brisket, turkey, chicken breast) lay slices slightly overlapping. For pulled/pulpy meats (pulled pork, boudin) mound neatly. For sausages, slice links on the bias and stack. Brush a light glaze of BBQ sauce (about 1 tbs total) over brisket/pulled pork if desired and garnish meats with a sprinkle of chopped parsley and 1–2 pickle slices for contrast.

Sides & Substitutions

Choose two sides from the Sides list and portion each at the listed amounts (about 3/4 cup for most sides, 1 cup for fries, 1 slice for cornbread). Place the two sides on the plate beside the meats. If the guest requests to substitute both sides for a baked potato (additional charge), prepare one large baked potato: scrub and dry potato, rub with oil and salt, bake at 400°F (200°C) for 45–60 minutes until tender, split open and offer butter, sour cream, chives, and shredded cheese. Place the single baked potato on the plate in place of two sides.

If serving fries, keep them crisp by holding in a single layer in a warmed oven (350°F / 175°C) on a rack for up to 10 minutes and salt immediately before plating. For mac & cheese, reheat covered at 350°F (175°C) for 15–20 minutes or until hot; for baked beans and collards reheat on stove over low heat stirring occasionally until steaming.

Condiments, Garnish & Service

Add condiments: place a ramekin or drizzle ~2 tbs BBQ sauce on the plate or serve on the side. Offer hot sauce if requested. Garnish with chopped parsley and pickle slices. Serve immediately while meats and sides are hot. Note: if customer requested specific slicing style (sliced vs chopped brisket), confirm before plating.
