Make spice infusion

In a small saucepan, combine 1 cup water (for infusion), crushed coriander seeds, crushed star anise, ground cinnamon, dry ginger powder, and nutmeg. Bring to a gentle simmer over medium heat, then lower heat and simmer very gently for 8 minutes to extract flavors. Do not boil vigorously. Remove from heat and let steep, covered, for 15 minutes.

Strain infusion

Strain the infused liquid through a fine-mesh sieve or cheesecloth into a clean heatproof container, pressing on solids to extract as much liquid as possible. Discard solids.

Prepare sugar caramel (for color and flavor)

In a separate small saucepan, add 1 cup granulated sugar and 1 tbs water (optional) over medium heat. Allow sugar to melt and begin to brown, swirling pan occasionally. When sugar reaches a deep amber color (watch closely to avoid burning), remove from heat and carefully whisk in 1 cup water (the 1 cup listed in the syrup concentrate section) slowly — the mixture will bubble vigorously. Return to very low heat and stir to dissolve any hardened caramel. If using store-bought caramel color instead, skip this step and add 1 tbs directly to the syrup later.

Combine sugars and infusion

To the warm caramel-sugar water (or to 1 cup water if skipping caramel step and using store-bought color), add the brown sugar and the strained spice infusion. Stir over low heat until all sugars dissolve and the mixture is homogeneous.

Add flavoring components

Remove pan from heat. Stir in fresh lime juice, orange zest, lemon zest, vanilla extract, and caramel color (if using store-bought). Taste the syrup — it should be very sweet with pronounced spice and citrus notes. Adjust: add additional lime (up to 1 tsp) for brightness, or a few drops of vanilla for softer roundness.

Cool and store syrup

Let the syrup cool to room temperature. Transfer to a clean bottle or jar, seal, and refrigerate. The concentrate will keep refrigerated for up to 2 weeks.

To finish the soda

Build the cola: For each 1 cup (8 fl oz) serving, combine 2 tablespoons (about 30 ml) of the cola syrup concentrate with 1 cup (8 fl oz) chilled sparkling water. Adjust syrup amount to taste (more syrup for a sweeter, stronger cola; less for lighter). Stir gently to combine so carbonation is preserved.

Serve: Fill a glass with ice cubes, pour the mixed cola over the ice, garnish with a lime wedge. Serve immediately.

Yield and scaling: The syrup recipe yields roughly 1 1/2 to 2 cups of syrup (concentrated), enough to make about 8 to 12 cups of finished cola depending on concentration used. Multiply ingredients proportionally if you want to produce larger batches.
