    Prepare the Vegetables

    Wash all the vegetables thoroughly. Slice the bell peppers, carrots, and onion. Cut the broccoli into small florets, and slice the mushrooms. Set all the prepared vegetables aside.

    Make the Sauce

    In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, cornstarch, water, red pepper flakes, and black pepper until well combined. Set aside.

    Heat the Pan

    Heat a large skillet or wok over medium-high heat. Add a tablespoon of vegetable oil and allow it to heat until shimmering.

    Sauté the Aromatics

    Add the minced garlic and grated ginger to the skillet. Sauté for about 30 seconds until fragrant, being careful not to burn them.

    Add the Vegetables

    Add the sliced onion, bell peppers, carrots, broccoli, snap peas, and mushrooms to the skillet. Stir-fry for about 5-7 minutes, or until the vegetables are tender but still crisp.

    Add the Sauce

    Pour the prepared sauce over the stir-fried vegetables. Stir well to coat all the vegetables in the sauce. Cook for an additional 2-3 minutes, until the sauce has thickened slightly.

    Remove from heat and serve the vegetable stir-fry hot. Enjoy it as a main dish or as a side dish with rice or noodles.
