Frites (Fries)

Method

Steak Preparation

  1. 1

    Season the Steak

Rub the ribeye steaks with olive oil, garlic powder, salt, black pepper, and chopped fresh rosemary. Make sure the steaks are evenly coated on both sides. Let them sit for at least 30 minutes at room temperature to absorb the flavors.

  2. 2

    Grill the Steak

Preheat the grill to high heat. Once hot, place the steaks on the grill and cook for about 4-5 minutes per side for medium-rare, or until your desired doneness. Remove from grill and let rest for 5-10 minutes before slicing.

Frites Preparation

  1. 3

    Prepare the Potatoes

Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick). Rinse the cut potatoes in cold water to remove excess starch, then pat them dry with a kitchen towel.

  2. 4

    Heat the Oil

In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

  3. 5

    Fry the Potatoes

Carefully add the potato strips in batches to the hot oil, frying them for about 5-7 minutes until they are golden brown and crispy. Remove the fries with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt immediately.
