Method

Preparation

  1. 1

    Prepare the Steak

Take the ribeye steaks out of the refrigerator and let them sit at room temperature for about 30 minutes. This helps them cook more evenly.

  2. 2

    Season the Steaks

Pat the steaks dry with paper towels. In a small bowl, mix together salt, black pepper, and garlic powder. Rub the seasoning mixture on both sides of the steaks.

Cooking

  1. 3

    Heat the Pan

In a large skillet or cast-iron pan, heat the olive oil over medium-high heat until it shimmers but does not smoke.

  2. 4

    Sear the Steaks

Place the steaks in the hot skillet and let them sear without moving them for about 4-5 minutes. This will create a nice crust.

  3. 5

    Flip the Steaks

Carefully flip the steaks using tongs and sear the other side for another 4-5 minutes for medium-rare. Adjust cooking time according to your preferred doneness.

  4. 6

    Add Butter and Rosemary (Optional)

If using, add the butter and rosemary sprigs to the pan during the last minute of cooking. Baste the steaks with the melted butter for added flavor.

Resting and Serving

  1. 7

    Rest the Steaks

Remove the steaks from the skillet and transfer them to a plate. Cover loosely with aluminum foil and let them rest for 5-10 minutes.

  2. 8

    Serve

Slice the steaks against the grain and serve with your choice of sides.
