Cooking Quinoa

Rinse Quinoa
Begin by rinsing the quinoa under cold water for about 1-2 minutes to remove bitterness.

Cook Quinoa
In a medium saucepan, combine rinsed quinoa and water. Bring to a boil over medium-high heat.

Simmer
Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the water is absorbed.

Fluff Quinoa
Remove from heat and let it sit covered for 5 minutes. Then fluff with a fork and set aside to cool.

Chop Vegetables
While the quinoa is cooking, chop the cherry tomatoes, cucumber, and red bell pepper into bite-sized pieces.

Prepare Avocado
Cut the avocado in half, remove the pit, and scoop out the flesh. Slice it into thin pieces.
Making the Dressing

In a small bowl, combine olive oil, lemon juice, minced garlic, salt, black pepper, and dried oregano. Whisk until well blended.
Assembling the Salad
