For the Tiramisu
Method
Prepare the Espresso Mixture
Brew the Espresso
Brew 1 cup of strong espresso and allow it to cool slightly.
Mix with Rum
In a shallow dish, mix the brewed espresso with 1 tablespoon of rum. Set aside.
Prepare the Mascarpone Mixture
Whip the Cream
In a mixing bowl, whip 1 cup of heavy cream until soft peaks form.
Combine Ingredients
In another bowl, combine 16 oz of mascarpone cheese, 1 tablespoon of sugar, and 1 teaspoon of vanilla extract. Mix until smooth.
Fold in Whipped Cream
Gently fold the whipped cream into the mascarpone mixture until fully combined.
Assemble the Tiramisu
Dip the Ladyfingers
Quickly dip each ladyfinger into the espresso-rum mixture, making sure not to soak them.
Layer the Tiramisu
In a 9x13 inch dish, layer half of the dipped ladyfingers on the bottom. Spread half of the mascarpone mixture over the ladyfingers.
Repeat Layers
Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
Refrigerate
Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
Serve
Dust with Cocoa Powder
Before serving, dust the top of the tiramisu with 2 tablespoons of cocoa powder.
Slice and Serve
Slice into squares and serve chilled.
