Make the Pomegranate Juice Base
In a medium saucepan, combine 1 cup of pomegranate juice, 2 tablespoons of sugar, and 1 tablespoon of lemon juice. Stir over medium heat until the sugar is completely dissolved. Remove from heat and let it cool to room temperature.

Assemble the Sparkler
In a large glass or wine flute, pour approximately 1/4 cup of the pomegranate juice base. Slowly top it off with Prosecco, filling the glass to the rim. Gently stir to combine.

Add Garnishes
Add a handful of fresh pomegranate seeds and a few mint leaves to each glass for garnish. Serve immediately.
