Method

Preparation of Pork Tenderloin

  1. 1

    Marinate the Pork

In a bowl, combine olive oil, minced garlic, chopped fresh rosemary, salt, and black pepper. Mix well and coat the pork tenderloin with this marinade. Let it marinate for at least 30 minutes.

  2. 2

    Sear the Pork

Heat a large skillet over medium-high heat. Add the marinated pork tenderloin and sear on all sides until browned (about 3-4 minutes per side).

  3. 3

    Bake the Pork

Transfer the skillet to a preheated oven at 180°C (350°F) and roast for about 20-25 minutes, or until the internal temperature reaches 70°C (160°F).

Preparation of Vegetables

  1. 4

    Chop the Vegetables

While the pork is baking, chop the carrots, zucchini, and bell peppers into bite-sized pieces.

  2. 5

    Sauté the Vegetables

In a separate skillet, add a bit of olive oil and heat over medium heat. Add the chopped vegetables and sauté for about 10-12 minutes, or until tender.

Preparation of Sauce

  1. 6

    Make the Sauce

In the same skillet used to sear the pork, add red wine and bring to a simmer. Scrape the bottom of the pan to loosen any browned bits. Stir in the butter and honey, and cook until the sauce is slightly thickened.

Plating

  1. 7

    Serve the Dish

Slice the pork tenderloin and arrange it on a plate. Add the sautéed vegetables beside the pork and drizzle the red wine sauce over the top. Serve warm.
