Preparation

    Prepare the Duck

    Score the skin of the duck breast in a diamond pattern, being careful not to cut into the meat. Season both sides with salt and black pepper. Set aside.

    Prepare the Vegetables

    Peel and chop the carrots, parsnips, and potatoes into even-sized pieces. Set aside.

Cooking

    Cook the Duck

    In a large skillet, heat the olive oil over medium heat. Add the duck breasts skin-side down and cook for about 6-8 minutes until the skin is crispy. Flip and cook for another 4-5 minutes until the meat is medium-rare. Remove from the skillet and let rest.

    Sauté Vegetables

    In the same skillet, add the carrots, parsnips, and potatoes. Sauté for about 10 minutes until they are tender and golden. Add minced garlic and fresh rosemary, cooking for an additional 2 minutes.

    Prepare the Sauce

    In the same skillet, pour in the red wine and chicken stock. Bring to a simmer, scraping the bottom to release the fond. Reduce the sauce for about 5-7 minutes until slightly thickened. Stir in the butter until melted and smooth.

Serving

    Plate the Dish

    Slice the duck breast and arrange it over the sautéed vegetables. Drizzle the red wine sauce over the top and garnish with fresh parsley.
