Marinade Preparation

    Prepare the Marinade

    In a large bowl, combine red wine, pale ale, olive oil, minced garlic, chopped rosemary, dried thyme, salt, and black pepper. Mix well.

    Marinate the Steak

    Add the top sirloin steak to the marinade, ensuring it is fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.

Joe's Sauce Preparation

    Sauté the Shallots

    In a saucepan over medium heat, melt the butter. Add the finely chopped shallots and sauté until translucent, about 3-4 minutes.

    Make the Sauce

    Pour in the red wine and beef stock. Bring to a boil, then reduce the heat and let simmer for about 15 minutes, or until reduced by half. Stir in chopped parsley and season with salt and pepper to taste.

Country Mashed Potatoes Preparation

    Cook the Potatoes

    In a large pot, add the cubed potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain the potatoes.

    Return the drained potatoes to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and well combined. Adjust seasoning as needed.

Steak Cooking

    Preheat your grill or grill pan over medium-high heat. Remove the steak from the marinade and shake off excess. Grill the steak for about 5-7 minutes per side for medium-rare, or until desired doneness.
