Method
Crust Preparation
- 1
Preheat the Oven
Preheat your oven to 325°F (160°C).
- 2
Mix the Crust Ingredients
In a medium bowl, combine the graham cracker crumbs, granulated sugar, melted butter, and salt. Mix until the crumbs are evenly coated with the butter.
- 3
Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Use the back of a measuring cup for even pressure.
- 4
Bake the Crust
Bake the crust in the preheated oven for about 10 minutes until lightly golden. Remove from the oven and let cool while preparing the filling.
Cheesecake Filling Preparation
- 5
Beat the Cream Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.
- 6
Add Sugar and Sour Cream
Gradually add granulated sugar and sour cream while continuing to beat until well incorporated.
- 7
Add Eggs
Add the eggs one at a time, mixing on low speed just until combined. Do not overmix.
- 8
Flavor the Filling
Stir in the vanilla extract and your choice of flavored extract or puree until evenly mixed.
- 9
Pour into Crust
Pour the cheesecake filling over the cooled crust in the springform pan.
- 10
Bake the Cheesecake
Bake in the preheated oven for 55-70 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
- 11
Cool and Refrigerate
Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight before serving.
