Cook the Macaroni
In a large pot, bring salted water to a boil. Add macaroni and cook according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce
In a saucepan, melt butter over medium heat. Stir in flour and cook for about 1 minute until it forms a roux. Gradually whisk in milk, continuing to whisk until the mixture thickens. Add cheddar cheese, cream cheese, salt, black pepper, garlic powder, and onion powder. Stir until the cheeses are melted and the sauce is smooth.

Combine Macaroni and Cheese Sauce
Add the cooked macaroni to the cheese sauce and mix well until all the macaroni is coated with the cheese mixture. Let cool for about 30 minutes.

Form the Balls
Once the mixture has cooled, scoop out small portions and roll them into balls (about 1 inch in diameter). Place them on a baking sheet lined with parchment paper.

Prepare for Frying
Beat the eggs in a shallow bowl. Place breadcrumbs in another shallow bowl. Dip each mac and cheese ball first into the egg, then roll it in breadcrumbs to coat evenly.

Combine Ingredients
In a small bowl, mix together sriracha sauce, mayonnaise, and lime juice until well combined. Adjust the spice level according to your preference.
