Sear the Pork Chops
In a large skillet over medium-high heat, heat a little more olive oil if needed. Add the seasoned pork chops and sear for about 4-5 minutes on each side until golden brown and cooked through. The internal temperature should reach 145°F (63°C). Remove from skillet and let them rest.

Mash the Potatoes
Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Apricot Chutney
In a saucepan, combine apricot preserves and a splash of water. Heat over medium until the preserves melt and blend into a sauce. Stir occasionally.

Gorgonzola Rosemary Cream Sauce
In a small saucepan, combine Gorgonzola cheese, heavy cream, and fresh rosemary. Heat over low until the cheese melts and the sauce thickens. Stir constantly.
