Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate using a double boiler or microwave. If using a microwave, heat in 30-second intervals, stirring in between until smooth. Set aside to cool slightly.

Carefully separate the egg whites from the yolks. Place the egg whites in a clean, dry mixing bowl and the yolks in another bowl.

Add the granulated sugar to the egg yolks. Whisk vigorously until the mixture is pale and thick (about 2-3 minutes).

Gradually fold the slightly cooled melted chocolate into the egg yolk mixture until fully combined.
Whipping the Egg Whites
