Method

Preparation of Chocolate Base

  1. 1

    Melt the Chocolate

Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate using a double boiler or microwave. If using a microwave, heat in 30-second intervals, stirring in between until smooth. Set aside to cool slightly.

  2. 2

    Separate the Eggs

Carefully separate the egg whites from the yolks. Place the egg whites in a clean, dry mixing bowl and the yolks in another bowl.

  3. 3

    Combine Yolks and Sugar

Add the granulated sugar to the egg yolks. Whisk vigorously until the mixture is pale and thick (about 2-3 minutes).

  4. 4

    Mix in Melted Chocolate

Gradually fold the slightly cooled melted chocolate into the egg yolk mixture until fully combined.

Whipping the Egg Whites

  1. 5

    Whip Egg Whites

Using an electric mixer, beat the egg whites on medium speed until soft peaks form. This should take about 3-4 minutes.

  2. 6

    Fold in Egg Whites

Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

Preparing Whipped Cream

  1. 7

    Whip the Cream

In a separate bowl, pour the heavy whipping cream and add vanilla extract. Beat on medium-high speed until stiff peaks form. This should take about 4-5 minutes.

  2. 8

    Combine with Chocolate Mixture

Gently fold the whipped cream into the chocolate mixture until fully incorporated.

Chilling and Serving

  1. 9

    Chill the Mousse

Spoon the chocolate mousse into individual serving dishes or glasses. Cover and refrigerate for at least 2 hours, or until set.

  2. 10

    Garnish and Serve

Before serving, top each mousse with chocolate shavings and fresh raspberries. Serve chilled.
