Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until fully melted and smooth. Remove from heat and let it cool slightly.

Mix Sugar and Eggs
In a separate mixing bowl, whisk together the granulated sugar and eggs until the mixture is pale and fluffy. This should take about 3-4 minutes.

Add Dry Ingredients
Sift the all-purpose flour and salt into the chocolate mixture, then fold gently until just combined. Add the vanilla extract and mix until smooth.

Prepare Ramekins
Preheat your oven to 200°C (400°F). Grease four ramekins with butter and dust with cocoa powder to prevent sticking. Place the ramekins on a baking tray.

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Bake
Bake the cakes in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is still soft.

Remove the cakes from the oven and let them cool for 1-2 minutes before inverting onto plates.

Dust the warm chocolate lava cakes with powdered sugar and serve immediately with a scoop of vanilla ice cream on the side.
