Method

Pasta Preparation

  1. 1

    Boil Water

Bring a large pot of salted water to a boil over high heat.

  2. 2

    Cook Linguine

Add linguine to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

  3. 3

    Drain and Oil Pasta

Once cooked, drain the pasta and return it to the pot. Drizzle with a little olive oil to prevent sticking.

Chicken Preparation

  1. 4

    Season Chicken

While the pasta is cooking, season chicken breasts with salt and black pepper.

  2. 5

    Dredge Chicken

Dredge the seasoned chicken in flour, shaking off any excess.

  3. 6

    Cook Chicken

In a large skillet, heat olive oil and butter over medium-high heat. Once hot, add the chicken breasts.

  4. 7

    Remove Chicken

Cook the chicken for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and keep warm.

Sauce Preparation

  1. 8

    Sauté Shallots

In the same skillet, add chopped shallots and sauté for 2-3 minutes until translucent.

  2. 9

    Cook Mushrooms

Add sliced mushrooms to the skillet and cook for another 5 minutes until they are browned and tender.

  3. 10

    Add Marsala Wine

Pour in the Marsala wine and cook for 2-3 minutes, allowing the alcohol to evaporate.

  4. 11

    Simmer Sauce

Stir in the chicken broth and bring to a simmer. Reduce the sauce by half, about 5-7 minutes.

  5. 12

    Add Heavy Cream

Lower the heat and stir in the heavy cream. Allow to cook for an additional 2-3 minutes until the sauce is thickened.

  6. 13

    Combine Chicken and Sauce

Return the cooked chicken to the skillet, spooning the sauce over the chicken to coat it well.

  7. 14

    Garnish with Parsley

Finish by stirring in chopped parsley for freshness.

Assembly

  1. 15

    Plate the Dish

Serve the chicken marsala over a bed of linguine, ensuring to drizzle the creamy mushroom sauce generously over the top.

  2. 16

    Garnish and Serve

Garnish with additional chopped parsley if desired.
