Prep the Tomatoes
Wash the tomatoes and dice them into small pieces. Place them in a mixing bowl.

Add Seasoning
Add salt, black pepper, and 1 tablespoon of olive oil to the diced tomatoes. Mix well and set aside to marinate for about 10 minutes.

Prepare the Basil and Mozzarella
Roughly chop the fresh basil leaves and dice the mozzarella cheese into small cubes.
Assemble and Toast

Slice the Baguette
Preheat your oven to 400°F (200°C). Slice the baguette into 1-inch thick slices.

Toast the Bread
Place the sliced baguette on a baking sheet. Brush each slice with the remaining tablespoon of olive oil. Bake in the preheated oven for about 5-7 minutes or until golden brown.

Top the Toasts
Remove the toasted bread from the oven. On each slice, add a spoonful of the marinated tomatoes, followed by a sprinkle of chopped basil and diced mozzarella.

Drizzle with a little extra olive oil if desired. Serve immediately while the bread is warm.
