Preparation of Ingredients

    Prepare the Grilled Vegetables

    Slice the zucchini and eggplant into 1/4 inch thick slices. Cut the bell pepper into strips. Toss all the vegetables in a bowl with olive oil, salt, and black pepper.

    Grill the Vegetables

    Preheat your grill or grill pan over medium-high heat. Place the seasoned vegetables on the grill and cook for about 5-7 minutes on each side until they are tender and have grill marks. Remove from heat and let cool.

    Prepare the Meats and Cheeses

    While the vegetables are grilling, arrange the prosciutto, salami, and capicola on a serving platter. Also, place the mozzarella balls and crumbled gorgonzola on the platter, along with slices of parmesan cheese.

Assembling the Anti-Pasta Display

    Arrange the Ingredients

    Once the grilled vegetables have cooled, arrange them around the meats and cheeses on the platter. Place the cherry tomatoes in a small bowl or directly on the platter.

    Add Garnishes

    Drizzle basil pesto and balsamic glaze over the assembled platter. Optionally, add fresh basil leaves for garnish.
