Filet Mignon

Country Mashed Potatoes

Method

Cooking the Filet Mignon

  1. 1

    Prepare the Steak

Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes. This helps it cook more evenly.

  2. 2

    Season the Steak

Rub the filet mignon with olive oil, then season generously with salt, black pepper, and garlic powder on both sides.

  3. 3

    Sear the Steak

Heat a cast-iron skillet or heavy skillet over medium-high heat. Once hot, add the filet mignon. Sear for about 4-5 minutes on each side for medium-rare, adjusting time as needed for desired doneness.

  4. 4

    Add Aromatics

During the last minute of cooking, add butter and fresh rosemary to the skillet. Baste the steak with the melted butter for extra flavor.

  5. 5

    Rest the Steak

Remove the steak from the skillet and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute.

Making Country Mashed Potatoes

  1. 6

    Prepare the Potatoes

Peel the russet potatoes and cut them into quarters. Place them in a large pot and cover with cold water.

  2. 7

    Boil the Potatoes

Bring the pot to a boil over high heat. Once boiling, reduce to a simmer and cook for about 15-20 minutes, or until the potatoes are tender when pierced with a fork.

  3. 8

    Drain and Mash

Drain the potatoes and return them to the pot. Add the butter, heavy cream, salt, black pepper, and garlic powder. Mash until smooth and creamy.

  4. 9

    Garnish

Stir in chopped chives for added flavor and color. Taste and adjust seasoning if necessary.
