    Prepare the Prime Rib

    Preheat your oven to 450°F (232°C).

    Season the Roast

    In a small bowl, mix together the kosher salt, black pepper, garlic powder, and chopped rosemary. Rub the mixture all over the prime rib roast. Drizzle with olive oil and make sure the seasoning covers the entire surface.

    Roast the Prime Rib

    Place the seasoned prime rib on a rack in a roasting pan. Roast in the preheated oven for 15 minutes, then reduce the oven temperature to 325°F (163°C) and continue roasting for about 1 hour and 15 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.

    Rest the Roast

    Remove the prime rib from the oven and let it rest for at least 20 minutes. This allows the juices to redistribute.

    Make the Au Jus

    While the roast is resting, pour the beef stock into the roasting pan, scraping up any browned bits from the bottom. Heat on the stovetop to create a simple au jus.

Country Mashed Potatoes

    Cook the Potatoes

    In a large pot, add the cubed russet potatoes and cover with cold water. Bring to a boil over medium-high heat. Add a teaspoon of salt and cook for about 15-20 minutes, or until the potatoes are tender.

    Drain and Mash

    Once cooked, drain the potatoes and return them to the pot. Add the butter and heavy cream. Mash the potatoes until smooth. Season with salt and black pepper to taste.

    Serve

    Transfer the mashed potatoes to a serving dish and garnish with chopped chives. Serve alongside the sliced prime rib and drizzle with au jus.
