Eggplant & Prep
Slice and sweat eggplant
Trim ends from eggplants and slice into 1/4" (6 mm) rounds. Arrange slices in a single layer on wire racks or baking sheets and sprinkle both sides lightly with coarse salt. Let sweat for 30–45 minutes to draw out bitterness and moisture. After sweating, rinse slices under cold water to remove excess salt and pat thoroughly dry with clean towels.
Prepare dredging station
Place flour in a shallow bowl. In a second bowl whisk together eggs and 3 tablespoons milk until smooth. Heat neutral oil in a large skillet over medium heat until shimmering (about 175–180°C / 350–360°F if using a thermometer). Working in batches, dredge each dried eggplant slice in flour, shake off excess, dip in the egg wash, and return briefly to the flour (light second dusting) if you want extra crust.
Fry eggplant
Fry slices in the hot oil in a single layer, 1–2 minutes per side, until golden-brown but not overly dark. Use a slotted spatula to transfer fried slices to a rack or paper towels to drain. Immediately season lightly with 1 teaspoon salt and a little black pepper. Repeat until all slices are cooked. For a lighter assembly, you may bake slices at 220°C / 425°F for 12–15 minutes, turning once, instead of frying—adjust directions accordingly.
Pomodoro Sauce
Simmer tomatoes
Stir in crushed tomatoes (or passata) and tomato paste, if using. Add dried oregano, sugar, 1 teaspoon salt, and 1 teaspoon freshly ground black pepper. Bring to a gentle simmer, reduce heat to low, and cook, uncovered, for 20–25 minutes until the sauce thickens slightly. Stir in torn basil leaves in the final 2 minutes. Taste and adjust seasoning.
Assembly & Baking
Preheat oven and choose dish
Preheat oven to 180°C (350°F). Select a 9x13" (or similar) baking dish or shallow casserole—large enough to layer eggplant comfortably.
Layer the Melanzane alla Parmigiana
Spread a thin layer (about 1/3–1/2 cup) of pomodoro sauce on the bottom of the baking dish to prevent sticking. Arrange a single layer of fried (or baked) eggplant slices to cover the base. Spoon an even layer of sauce over eggplant (about 3/4 cup), dot with slices/shreds of fresh mozzarella (about 100 g), sprinkle with a tablespoon of grated Parmigiano-Reggiano, and scatter a few basil leaves. Repeat layering: eggplant, sauce, mozzarella, Parmigiano, basil. Aim for 3–4 layers, finishing with a generous final layer of sauce, remaining mozzarella and the remaining Parmigiano (and optional provolone/Pecorino). Drizzle 2 tablespoons extra-virgin olive oil over the top.
Bake
Bake in the preheated oven 25–30 minutes, or until cheese is bubbly and the top is golden. If you prefer a more browned top, place under the broiler for 2–3 minutes—watch closely to avoid burning.
Rest and serve
Remove from oven and let rest 10–15 minutes to set (this helps slicing and stacking like a Napoleon). Garnish with remaining fresh basil leaves. Cut into squares or slice and serve warm. Provide extra grated Parmigiano at the table.
Finishing & Notes
Leftovers keep refrigerated up to 3–4 days; reheat in a 175°C (350°F) oven until warmed through to preserve texture. For a lighter version, skip frying and roast eggplant slices brushed with olive oil until tender and golden before layering. Ensure all components (eggplant, sauce, cheeses, basil) are proportionally used as described so every bite contains the pomodoro, cheeses and herbs.
