Method
Prep Herbs
Wash and dry
Rinse all fresh herbs under cool running water to remove dirt. Shake off excess water and dry thoroughly using a salad spinner or by gently patting with clean kitchen towels — herbs should be as dry as possible to avoid watering down the mixture (about 3–5 minutes).
Remove tough stems and chop
Strip parsley, dill, and mint leaves from thick stems. Remove basil leaves from stems. Gather herbs on a cutting board and use a sharp chef's knife to finely chop parsley, dill, and mint. Stack basil leaves, roll into a tight cylinder (chiffonade) and slice into thin ribbons. Slice chives thinly. Aim for uniform small pieces so flavors meld evenly (about 5 minutes).
Combine & Season
Mix base
Place the chopped parsley, chives, basil, dill, and mint in a medium mixing bowl. If using minced garlic or nuts, add them now.
Add oil and acid
Drizzle the extra-virgin olive oil and fresh lemon juice over the herbs. Add lemon zest if using. Gently toss with a spoon or spatula until the herbs are evenly coated. The oil should lightly bind the herbs but not make them soggy (about 1 minute).
Season
Season with sea salt, freshly ground black pepper, and red pepper flakes if using. Taste and adjust seasoning — add a pinch more salt or a splash more lemon juice to brighten the flavors as needed.
Finish & Use
Rest (optional)
Let the herb mixture sit at room temperature for 10–15 minutes to allow flavors to meld. If not using immediately, cover and refrigerate; bring back to room temperature before serving for best flavor.
Serve suggestions
Use this herb mix as a finishing relish for grilled fish or chicken, stir into yogurt or sour cream for a quick herb sauce, toss with roasted vegetables, spoon over toasted bread with grated Parmesan for a fresh bruschetta, or fold into cooked pasta with a little extra olive oil. If using as a spread or topping, sprinkle toasted pine nuts or chopped walnuts and grated Parmesan before serving.
Storage
Store leftover herbs in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in a thin layer on a tray or portion into ice cube trays with a little olive oil; freeze until solid, then transfer cubes to a labeled bag for up to 3 months.
