Prep noodles and sauce

Bring a large pot of salted water to a boil. Cook lo mein noodles according to package directions until just tender (al dente). Reserve 1/2 cup of the pasta cooking water, then drain and toss noodles with 1/2 teaspoon sesame oil to prevent sticking. In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, rice vinegar, sugar, cornstarch and 3 tablespoons water until smooth; set aside.

Prep shrimp and vegetables

Pat shrimp dry and season lightly with a pinch of salt and black pepper. Separate the white parts of the green onions from the green tops. Make sure carrots are julienned, cabbage thinly sliced, garlic and ginger minced.

Cook shrimp

Heat a large wok or skillet over high heat until very hot. Add 1 tablespoon vegetable oil and swirl. Add shrimp in a single layer and cook 1-1.5 minutes per side, until pink and just cooked through. Remove shrimp to a plate and set aside.

Stir-fry vegetables

Return the wok to high heat and add the remaining 1 tablespoon vegetable oil. Add the white parts of the green onions, minced garlic and minced ginger; stir-fry 20–30 seconds until fragrant (don’t burn). Add carrots and stir-fry 1–2 minutes until they begin to soften. Add sliced cabbage and continue stir-frying 1–2 minutes until cabbage is wilted but still slightly crisp.

Combine noodles and sauce

Add the drained noodles to the wok with the vegetables. Pour the prepared sauce over the noodles. Use tongs or two spatulas to toss everything together vigorously so the sauce coats noodles and vegetables. If the sauce seems too thick or the noodles are dry, add up to 2–4 tablespoons of the reserved pasta water to loosen the sauce and create a glossy finish.

Finish with shrimp and season

Return the cooked shrimp to the wok and toss to combine, heating shrimp through for about 30 seconds. Drizzle 1 teaspoon sesame oil over the lo mein, add the green parts of the green onions and red pepper flakes if using. Taste and adjust seasoning with salt or additional soy sauce and black pepper as needed.

Transfer shrimp lo mein to a serving platter or individual bowls and serve immediately while hot.
