Cook the noodles

Bring a large pot of salted water to a rolling boil. Add the noodles and cook until just al dente according to package directions (usually 6–9 minutes for spaghetti; 3–4 for fresh egg noodles). Reserve 1/2 cup of the cooking water, then drain noodles and set aside.

Prepare the beef

While noodles cook, thinly slice the steak against the grain into bite-size strips. Pat dry and season lightly with a pinch of salt and pepper.

Sear the beef

Heat 1 tbs vegetable oil in a large skillet or wok over high heat until shimmering. Add half the steak in a single layer and sear undisturbed for about 45–60 seconds until browned, toss and sear the other side 30–45 seconds for medium-rare. Remove to a plate and repeat with the remaining 1 tbs oil and steak. Return all seared beef to the plate and tent loosely with foil to rest.

Melt butter

Lower heat to medium and add 1 tbs of butter to the same pan; swirl to melt and pick up browned bits — this will form part of the sauce base.

Garlic Sauce

Prepare sauce mixture

In a small bowl, whisk together soy sauce, oyster sauce, fish sauce, dark soy (if using), sugar, and stock (or water) until sugar dissolves. Set aside.

Cook the garlic

Add the remaining 2 tbs butter to the pan over medium heat. Add the minced garlic and sauté, stirring constantly, until fragrant and just beginning to turn golden (about 1–1.5 minutes). Be careful not to burn the garlic.

Combine sauce

Pour the prepared sauce into the pan with the garlic. Add red pepper flakes if using. Bring to a gentle simmer and let it reduce for 1–2 minutes to slightly thicken.

Finish & Serve

Toss noodles with sauce

Add the drained noodles to the pan with the garlic sauce. Toss vigorously (use tongs or two forks) to coat the noodles evenly. If the sauce seems too thick or sticky, add up to the reserved 1/2 cup of noodle cooking water, a few tablespoons at a time, until the noodles are glossy and saucy.

Add beef & season

Return the seared beef and any accumulated juices to the pan. Toss gently to combine and warm the beef through, about 1 minute. Drizzle sesame oil over the noodles and season with freshly ground black pepper to taste. Taste and adjust seasoning with a splash more soy or fish sauce if needed.

Garnish & serve

Transfer garlic noodles with beef to serving plates or a family-style bowl. Sprinkle sliced scallions and toasted sesame seeds over the top. Serve with lime wedges on the side for optional brightness.
