    Prepare citrus

    Juice fresh lemons until you have 0.75 oz of lemon juice (about half a lemon). Strain to remove pulp and seeds.

    Dry shake

    Add the Suntory Toki whisky, Amaretto Disaronno, tonka liqueur, fresh lemon juice, simple syrup and the egg white into a cocktail shaker (no ice). Seal and dry-shake vigorously for 15–20 seconds to emulsify the egg white and create a foamy texture.

    Wet shake

    Open the shaker and add a generous scoop of ice (about 4–6 large cubes). Re-seal and shake vigorously for 12–15 seconds until the exterior of the shaker is very cold (this chills and dilutes the drink).

    Double-strain and serve

    Double-strain the cocktail (through the shaker strainer and a fine mesh strainer) into a chilled coupe or rocks glass without ice. The foam should be thick and silky on top.

    Garnish

    Optional: Add 2 dashes of bitters onto the foam and gently drag a toothpick through them for a design. Finish with a light grating of tonka bean over the foam or express a lemon twist over the surface and drop it in.

    Serve

    Serve immediately while the foam is fresh. Advise guests about the presence of egg white (unheated) if necessary.
