Chill the Badenhorst Secateurs Chenin Blanc thoroughly for at least 2 hours before serving. Pour the entire bottle into a clean pitcher or decanter.

If preparing a larger, softer batch or for guests who prefer lower alcohol, optionally dilute by adding up to 1 cup (240 ml) of a neutral, chilled white wine or chilled water. Adjust to taste.

Wash all fruit and herbs. Thinly slice the lemon, orange and green apple. Lightly bruise the lemon and orange slices with the back of a spoon to release oils and juices.

Add the lemon, orange, green apple slices and thinly sliced ginger to the pitcher with the wine.

Stir in 1 tablespoon of honey (or cane sugar) into the wine mixture. Stir until dissolved. Taste and add up to another teaspoon if you prefer slightly sweeter wine.

If using lime zest, grate the outer green layer over the pitcher (avoid bitter white pith). The zest will add bright citrus top notes that complement the Chenin Blanc.

Add 3 sprigs of fresh thyme and the optional rosemary sprig to the pitcher. Lightly clap the herbs between your palms before adding to release aromatic oils.

Drop in 6 whole black peppercorns for a subtle warm, spicy lift. These add complexity without heat—leave them whole to avoid over-extraction.

Gently stir the mixture once more to combine aromatics, then allow the wine to macerate with fruit and herbs in the refrigerator for 30–45 minutes. This extracts fragrance while preserving the wine's freshness.

Prepare serving glasses by adding large ice cubes (2 per glass) to keep dilution slow and the wine cold.

Give the pitcher a gentle stir. Using a slotted spoon or tongs, divide the fruit, herbs and wine among 4 glasses, pouring until each glass is about three-quarters full.

Top each glass with approximately 30 ml (1 oz) sparkling water if you prefer a lightly spritzed finish; otherwise serve still. Adjust sparkling water to taste, up to 120 ml for the batch.

Garnish each glass with a lemon twist or a small herb sprig. Serve immediately so the wine retains its bright acidity and aromatic lift.

After serving, the leftover infused wine can be refrigerated for up to 24 hours; flavors will intensify and some bitterness may develop from citrus pith—remove fruit if storing longer.
