Preparing the Wild Mushrooms

Sauté the Mushrooms

In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the mixed wild mushrooms, salt, and pepper. Cook for 8-10 minutes until the mushrooms are tender and have released their juices. Stir in chopped parsley before removing from heat.

Making the Red Miso Sauce

Combine Ingredients

In a small bowl, whisk together the red miso paste, sesame oil, rice vinegar, honey or maple syrup, and water until smooth and well combined.

Preparing Baba Ganoush

Blend Ingredients

In a food processor, combine the roasted eggplant, tahini, lemon juice, minced garlic, olive oil, salt, and cumin. Blend until smooth and creamy. Adjust seasoning to taste.

Making Furikake

Mix Furikake Ingredients

In a small bowl, combine crushed nori seaweed, toasted sesame seeds, salt, and dried bonito flakes. Mix well and set aside.

Serving

Plate the Dish

Serve the sautéed wild mushrooms drizzled with red miso sauce, alongside a scoop of baba ganoush and a sprinkle of furikake on top.
