Pasta Preparation

Cook the Spirulina Tagliatelle
Bring a large pot of salted water to a boil. Add the spirulina tagliatelle and cook according to package instructions until al dente. Drain and set aside.

Roasted Garlic Cream

Prepare the Roasted Garlic Cream
Wrap the garlic cloves in foil and roast in a preheated oven at 200°C (400°F) for 20 minutes. Once roasted, squeeze the garlic into a saucepan, add heavy cream, butter, salt, and black pepper. Simmer on low heat for 5 minutes until slightly thickened.
Saffron Bure Blanc

Make the Saffron Bure Blanc
In a saucepan, combine white wine, shallots, and saffron. Simmer until reduced by half. Add butter, whisking continuously until emulsified. Season with salt.
Assembly

Combine and Serve
In a large bowl, combine the cooked spirulina tagliatelle with the roasted garlic cream. Plate the pasta, top with blistered tomatoes, drizzle with saffron bure blanc, and finish with toasted Parmesan.
