Preparation and Cooking

    Pickling the Watermelon Radish

    Thinly slice the watermelon radish and place it in a bowl. In a separate bowl, mix equal parts of vinegar and sugar until dissolved. Pour the mixture over the radish slices and let them sit for at least 30 minutes in the fridge.

    Preparing the Crispy Carrots

    Using a vegetable peeler, create thin strips of carrot. Heat sesame oil in a frying pan over medium heat. Add the carrot strips and sauté until they are crispy. Season with salt and set aside.

    Cooking the Tuna

    Pat the yellowfin tuna steaks dry and season both sides with salt, pepper, and furikake seasoning. Heat a non-stick skillet over high heat. Add a splash of sesame oil and sear the tuna for 1-2 minutes on each side for rare, or longer for desired doneness. Remove from heat.

    Making Orange Shoyu

    In a small bowl, combine soy sauce and fresh orange juice. Stir well to combine.

    Serving

    Plate the seared tuna, top with pickled watermelon radish, crispy carrots, and drizzle with orange shoyu. Garnish with finger lime caviar.
