    Prepare the Vegetables

    Peel and dice the parsnips and sweet potato into small cubes. Place them in a pot and cover with water. Bring to a boil and simmer until tender, about 15 minutes. Drain and set aside.

    Make the Brown Butter

    In a skillet over medium heat, melt the butter. Continue to cook, stirring frequently, until the butter is golden brown and has a nutty aroma, about 5-7 minutes. Be careful not to burn it.

    Cook the Scallops

    In a separate pan, heat a bit of the brown butter over medium-high heat. Season the scallops with salt and black pepper. Sear the scallops for about 2-3 minutes on each side until they are golden brown and opaque in the center.

    Combine and Serve

    In a large bowl, combine the cooked parsnips and sweet potatoes with the fresh thyme and rosemary. Drizzle with the remaining brown butter. Plate the parsnip and sweet potato mixture, top with seared scallops, and sprinkle with pomegranate seeds. Serve immediately.
