Heat a large skillet over medium-high heat. Add butter and olive oil until butter is melted and shimmering.

Add the minced shallot and sauté until translucent, about 2 minutes.

Add chopped wild mushrooms in a single layer (work in batches if necessary). Cook undisturbed for 3–4 minutes to develop color, then stir and continue cooking 4–5 minutes until most moisture has evaporated and edges are golden.

Add minced garlic and thyme; cook 30–45 seconds until fragrant being careful not to burn the garlic.

Deglaze the pan with the white wine (or stock), scraping up browned bits; cook until liquid is mostly evaporated, about 1–2 minutes. Season with sea salt and 1 teaspoon black pepper. Remove from heat and let cool slightly.

Creamy goat cheese mixture

In a bowl, combine crumbled goat cheese and softened cream cheese. Use a fork or rubber spatula to blend until mostly smooth; leave a little texture for interest.

Stir in sour cream, heavy cream (if needed to loosen), lemon zest, chives, and 1/2 teaspoon black pepper. Taste and adjust seasoning.

Fold the warm (but not piping hot) mushroom mixture into the blended cheeses until evenly incorporated. The warmth will help meld flavors and soften the cheeses. If mixture seems too thick, add up to 1 tablespoon more cream.

Finishing & garnish

Transfer the dip to a serving bowl and smooth the top. Drizzle 1 to 2 tablespoons truffle honey over the surface, then sprinkle chopped parsley. Optionally finish with a light drizzle of extra-virgin olive oil and a crack of black pepper.

Garlic crostini

Preheat the oven to 400°F (200°C). Arrange baguette slices on a baking sheet in a single layer.

Brush each slice lightly with olive oil and sprinkle a small pinch of sea salt.

Toast in the oven until edges are golden and crisp, about 8–10 minutes, flipping halfway for even color.

Remove crostini from oven and while still warm, rub the cut side of the halved garlic clove over each slice to impart a subtle garlic flavor.

Let crostini cool slightly; serve alongside the warm or room-temperature mushroom and goat cheese dip.
